INGREDIENTS
- 800 g raw potatoes (cooking type B)
- 20 g spring onion (approx. 1 stalk)
- 10 g fresh parsley (finely chopped)
- 5 g fresh chives
- 500 g ground turkey (max. 6% fat)
- 1 teaspoon chili flakes
- 40 g butter (softened)
- 1 tablespoon olive oil
- 50 ml semi-skimmed milk
- Salt
- Pepper
INSTRUCTIONS
- 1First, prepare a larger pot with salted water. Peel the potatoes, cut them into smaller pieces, and place them in the prepared pot. Cover with a lid, place on high heat, and cook the potatoes for 19–20 minutes.
- 2Meanwhile, preheat the oven to 205–210 °C and prepare a baking sheet (30 cm × 40 cm) lined with baking paper.
- 3In the meantime, finely chop the spring onion, parsley, and chives. In a large bowl, combine the ground turkey, parsley, spring onion, chili flakes, 30 g of butter, 1 tablespoon of oil, 50 ml of milk, salt, and pepper, and mix well. Shape the mixture into patties weighing approximately 135–140 g each, and place them on the prepared baking sheet.
- 4Once the meat mixture is prepared, place the baking sheet in the oven preheated to 205–210 °C and bake the patties for 17–18 minutes.
- 5Drain the cooked potatoes and return them to the pot. Add the finely chopped chives and the remaining butter, and mix well.
- 6Once the patties are baked, divide the potatoes onto 4 plates, add the patties, and serve.
