INGREDIENTS

  • 2 skrei cod fillets (each 200 g)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 tablespoon plain flour
  • 200 g crème fraîche
  • 200 ml semi-skimmed milk
  • 1 teaspoon dried green pepper (slightly crushed)
  • 2 tablespoons almond slices
  • A handful of fresh dill
  • Juice of 1 lemon
  • A pinch of ground nutmeg
  • Salt
  • Pepper

INSTRUCTIONS

    First, prepare the sauce. Melt the butter in a pan and toast the flour on it to create a light roux. Add a pinch of nutmeg and gradually pour in the milk while stirring constantly. Let it simmer gently for a while. Then stir in the crème fraîche and dried green pepper. If necessary, add a little more milk to thin it. Reduce the heat, salt, and stir in the chopped dill. Season with lemon juice - one to two tablespoons.

    Quickly toast the almonds in a little oil, salt them, and set aside.

    Pat the cod dry, lightly salt and pepper it. Heat olive oil in a pan and fry the fillets on one side for 3–4 minutes, then turn them over and finish cooking for the same amount of time. Drizzle with lemon juice towards the end.

    Pour the dill sauce into a deep plate or bowl, place the cod fillet on top, and sprinkle with almonds and dill. Roasted or boiled potatoes make a good side dish.
