INGREDIENTS
- 2 fillets of Skrei cod (200 g each)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 200 g crème fraîche
- 200 ml semi-skimmed milk
- 1 teaspoon dried green pepper (lightly crushed)
- 2 tablespoons almond flakes
- Handful of fresh dill
- Juice of 1 lemon
- Pinch of nutmeg
- Salt
- Pepper
INSTRUCTIONS
- 1First, prepare the sauce. Melt butter in a pan and toast the flour in it to create a light roux. Add a pinch of nutmeg and gradually pour in the milk, stirring constantly. Let it simmer gently for a while. Then stir in the crème fraîche and dried green pepper. If needed, add a little more milk to thin it out. Reduce the heat, season with salt, and stir in the chopped dill. Season with lemon juice – one to two tablespoons.
- 2Quickly toast the almonds in a little oil, season with salt, and set aside.
- 3Pat the cod dry, lightly season with salt and pepper. Heat olive oil in a pan and pan-fry the fillets for 3–4 minutes on one side, then flip them and cook for the same amount of time. Drizzle with lemon juice towards the end.
- 4Pour the dill sauce into a deep plate or bowl, place the cod fillet on top, and sprinkle with almonds and dill. Roasted or boiled potatoes make a suitable side dish.
