INGREDIENTS
- 100 g raisins
- 90 g rum
- 100 g brown sugar
- 100 g butter
- 4 eggs
- Lemon zest
- Vanilla
- 250 g plain/semi-coarse flour
- 1/2 baking powder
- 250 g curd
- A pinch of salt
- Coarse flour (for dusting)
INSTRUCTIONS
- 1The night before, soak the washed raisins in rum. This will wash off any possible dirt and mainly the oily film that protects the raisins from sticking together, allowing the alcohol to be better absorbed and the raisins to soak well.
- 2Gradually whisk 4 medium eggs from happy hens into the whipped butter with sugar to create a fluffy mixture.
- 3Add the seeds from the vanilla and lemon zest. I always grate a chemically untreated/organic lemon before using it for juice and keep the zest in the freezer. It's an absolute game changer! Highly recommended.
- 4Then add the mixture of flour, baking powder, and salt, soft curd, and finally the drained fragrant raisins, and mix into a smooth batter.
- 5Pour the batter into a pre-greased mold dusted with coarse flour and bake for about 50 minutes at 170°C.
