INGREDIENTS FOR DOUGH
- 500 g all-purpose flour
- 100 g granulated sugar
- 300 ml lukewarm semi-skimmed milk
- 60 g butter
- 20 g fresh yeast
- 2 eggs
- 1 teaspoon vanilla extract or seeds from one pod
- Zest of 1 lemon
- A pinch of salt
INGREDIENTS FOR FILLING
- 90 g butter
- 70 g brown sugar
- 75 g pistachios (unsalted and peeled)
- 50 g freeze-dried fruit (strawberries, raspberries, apricots..)
- 1 teaspoon ground cinnamon
INGREDIENTS FOR GLAZE
- 5 tablespoons maple syrup
- 8 g vanilla sugar (one packet)
- Juice of 1 lemon
- 100 ml water
INSTRUCTIONS
- 1In a bowl, mix flour, sugar, and salt. Dissolve yeast in warm milk and add to the mixture. Add melted butter, eggs, vanilla, and lemon zest. Mix everything into a smooth dough. Let it rise in a warm place for about an hour.
- 2For the filling, melt butter with brown sugar in a pan, add finely chopped pistachios. Sprinkle with cinnamon, mix, and let it simmer briefly until everything is well combined. Then let it cool.
- 3Roll out the risen dough into a rectangle. Before that, dust the surface and rolling pin with flour. Spread the prepared filling, sprinkle with crushed freeze-dried fruit, and roll into a roulade. Then cut it lengthwise and braid the two ends into a braid. Shape into a wreath and place in a round form lined with baking paper. Let it rise for another 20 minutes.
- 4Preheat the oven to 180 °C and bake the braid for 50 - 60 minutes until it is baked inside (test with a skewer). During baking, prepare the glaze. In a small pot, mix maple syrup, vanilla sugar, and lemon juice. Cook on low heat until it thickens. Brush the braid with the glaze immediately after removing it from the oven.
- 5Optionally, serve the braid drizzled with maple syrup and sprinkled with pistachios, almonds, or dried fruit.
