INGREDIENTS

  • 600 g minced pork
  • 4 tablespoons soy sauce with reduced salt
  • 3 cloves of garlic
  • 3 cm piece of fresh ginger
  • 1 red hot chili pepper
  • 2 spring onions
  • 1 tablespoon oil
  • 1 - 2 tablespoons peanut butter
  • 200 ml chicken or vegetable broth
  • A handful of fresh coriander
  • ½ teaspoon salt
  • Freshly ground black or Sichuan pepper
  • 240 - 350 g Chinese thin egg noodles

INSTRUCTIONS

    Mix the minced meat with 1 tablespoon of soy sauce, use the remaining 3 tablespoons for the sauce. Lightly salt the meat and mix. Let it rest for 10 minutes.

    Meanwhile, finely chop the garlic, ginger, and chili pepper. Cut the spring onion into strips.

    Heat oil in a wok pan, add the chopped vegetables except for the green part of the spring onion and sauté for a while. Once the vegetables gain color, add the meat and stir-fry until cooked through. During the process, try to break the meat into the smallest possible pieces using a flat spatula.

    Now cook the noodles according to the instructions on the package.

    Once the meat is done, add the broth, peanut butter, and the remaining 3 tablespoons of soy sauce. Let it simmer on low heat for 5 minutes, add the green part of the spring onion, and serve with the noodles.
