INGREDIENTS

  • 12 ripe but firm apricots
  • 160 g smoked cheese knots
  • 16 slices of pancetta
  • 16 mini mozzarellas
  • 8 short wooden skewers
  • 4 tablespoons olive oil
  • A large handful of fresh basil
  • Juice of 1 lemon
  • Salt
  • Pepper

INSTRUCTIONS

    Halve the apricots and remove the pits. Wrap each cheese knot with a slice of pancetta. Alternately skewer: half an apricot, a wrapped knot, and a mini mozzarella. Preheat the grill to medium heat. Grill the skewers on all sides for about 8–10 minutes, until the pancetta is crispy, the apricots are softened, and the cheeses start to melt slightly.

    Prepare the dressing. In a blender or mortar, blend basil with lemon juice, oil, salt, and pepper. Season to taste. If the lemon is very sour, add a pinch of sugar. Transfer the finished skewers to a plate or wooden board, drizzle lightly with the dressing, and serve, for example, with fresh baguette and arugula.
Tip
You can add a pinch of sugar if the lemon is too sharp.
