INGREDIENTS

  • 3 large ripe bananas
  • 200 ml 33% whipping cream
  • 2 tablespoons tahini paste
  • 2 tablespoons honey or maple syrup
  • ½ teaspoon vanilla extract or seeds from 1 vanilla pod
  • 8 ice cream cones
  • A handful of pecans
  • A handful of dark chocolate
  • A handful of dried banana slices
  • A pinch of sea salt

INSTRUCTIONS

    Lightly toast the bananas on both sides in a dry pan until golden (about 2-3 minutes), then let them cool and place them in the freezer. Once the bananas are frozen, blend them together with the cream, tahini paste, honey, vanilla, and salt into a smooth cream.

    Stir in the chopped pecans and chocolate (reserve a little for decoration).

    Pour the mixture into a container and freeze ideally overnight (at least 6 hours). Serve the ice cream in a cone sprinkled with nuts, chocolate, and dried bananas.
