INGREDIENTS

  • 4 ears of corn
  • 120 g mayonnaise (or vegan mayonnaise)
  • 120 g sour cream (or plant-based yogurt)
  • Juice of 1 lime
  • 2 cloves garlic, finely chopped
  • 60 g cotija cheese, Parmesan (or vegan Parmesan, feta)
  • 1 teaspoon dried chili (to taste)
  • 2 tablespoons chopped fresh cilantro
  • Salt to taste

OPTIONAL

  • 6 crushed nachos
  • Butter for brushing

    If using fresh corn, remove the husks and silks and wash thoroughly. Then dry it with a paper towel.

    Heat a grill or pan to medium heat and grill the corn for approximately 10-15 minutes, turning regularly to ensure even cooking and a golden-brown color. Some parts may be slightly charred, which adds to the flavor.

    Meanwhile, in a bowl, mix mayonnaise, sour cream, lime juice, finely chopped garlic, and a pinch of salt until smooth.

    You can brush the corn with melted butter, but this step is optional. Then spread it with the prepared creamy mixture, sprinkle with cotija cheese, or Parmesan, feta, or vegan cheese. Finally, sprinkle with dried chili, chopped cilantro, and crushed nachos for extra crunch.

    Serve Elote preferably warm, when all flavors are best highlighted.
Tip
If you like sweet and savory combinations, you can add a little agave syrup or honey to the Elote for extra flavor.
