If using fresh corn, remove the husks and silk, and wash it thoroughly. Then dry it with a paper towel.

Heat a grill or pan to medium heat and grill the corn for approximately 10-15 minutes, turning regularly so that it is evenly roasted and turns golden-brown. Some parts may be slightly charred, which adds to the flavor.

Meanwhile, in a bowl, mix the mayonnaise, sour cream, lime juice, finely chopped garlic, and a pinch of salt into a smooth mixture.

Chef's tip

If you like sweet and savory combinations, you can add a little agave syrup or honey to the Elote for extra flavor.
