INGREDIENTS
- 65 g softened butter
- 70 g sugar
- pinch of salt
- 3 eggs
- 130 g ground poppy seeds
- 80 g gluten-free oat flour
- 6 g baking powder
- 1 large apple, approx. 150 g
- 60 - 65 g milk
- edible flowers for garnish
TO SERVE
- Plain yogurt
- Kefir
METHOD
- 1Turn on the oven to top and bottom heat and set to 180°C.
- 2Whisk the butter for 3 minutes or until it turns pale. Add sugar and salt and whisk briefly again. Beat each egg into the batter separately. Add poppy seeds, oat flour, baking powder, milk, and finely grated apple. Mix well until all ingredients are combined.
- 3Line a baking pan measuring 21 x 21 cm with baking paper and pour in the batter. Smooth it out and bake for 25 - 30 minutes in the middle of the oven. Check for doneness with a skewer; once it comes out clean, the poppy seed cake is baked.
