INGREDIENTS
- 2 cups cooked brown rice
- ½ yellow onion, chopped
- 1 clove garlic, minced
- 1 red bell pepper, diced
- ½ jalapeño pepper, chopped (optional)
- ⅓ cup chopped fresh cilantro
- 1 tablespoon olive oil
- 1 ½ cups canned black beans (unsalted), drained
- 1 ½ cups water (or bean broth)
- Salt to taste
- Pepper to taste
INSTRUCTIONS
- 1In a pan, heat the oil over medium heat. Add the onion and sauté for about 3 minutes until softened. Then add the garlic and sauté for another 20 seconds. Pour in the black beans and water. Increase the heat to medium-high and simmer gently.
- 2Gently stir in the cooked rice and cook for about another 2 minutes until everything is well combined. Just before serving, add the cilantro, chopped bell pepper, and jalapeño. Season with salt and pepper to taste.

- 1If you have it, also season the dish with Lizano sauce!
