INGREDIENTS

  • 2 cups cooked brown rice
  • ½ yellow onion, chopped
  • 1 clove garlic, minced
  • 1 red bell pepper, diced
  • ½ jalapeño pepper, chopped (optional)
  • ⅓ cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 ½ cups canned black beans (unsalted), drained
  • 1 ½ cups water (or bean broth)
  • Salt to taste
  • Pepper to taste

INSTRUCTIONS

    In a pan, heat the oil over medium heat. Add the onion and sauté for about 3 minutes until softened. Then add the garlic and sauté for another 20 seconds. Pour in the black beans and water. Increase the heat to medium-high and simmer gently.

    Gently stir in the cooked rice and cook for about another 2 minutes until everything is well combined. Just before serving, add the cilantro, chopped bell pepper, and jalapeño. Season with salt and pepper to taste.
