Preparation method

Ingredients overview

  • 2 cups cooked brown rice
  • ½ yellow onion, chopped
  • 1 clove garlic, finely chopped
  • 1 red bell pepper, diced
  • ½ jalapeño pepper, chopped (optional)
  • ⅓ cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 and ½ cups canned black beans (unsalted), drained
  • 1 and ½ cups water (or bean broth)
  • Salt to taste
  • Pepper to taste

INSTRUCTIONS

Heat oil in a pan over medium heat. Add onion and sauté for about 3 minutes until softened. Then add garlic and sauté for another 20 seconds. Pour in black beans and water. Increase heat to medium-high and simmer gently.

Gently stir in cooked rice and cook for about another 2 minutes until everything is well combined. Just before serving, add cilantro, chopped bell pepper, and jalapeño. Season with salt and pepper to taste.

If you have it, also season the dish with Lizano sauce!
