INGREDIENTS
- 90 g melted butter
- 2 eggs
- 140 g brown sugar
- 205 g all-purpose flour
- 40 g cocoa powder
- teaspoon baking powder
- half a teaspoon baking soda
- pinch of salt
- approx. 50 g powdered sugar for coating
INSTRUCTIONS
- 1Whisk the melted butter together with the eggs and brown sugar. In a separate bowl, mix the flour, cocoa powder, baking powder, baking soda, and salt. Add the dry ingredient mixture to the wet mixture and stir until everything is perfectly combined into a thick dough. Cover the bowl with plastic wrap and let it rest in the refrigerator for an hour.
- 2Once the dough has rested, preheat the oven to 180 °C and line a baking sheet with parchment paper. Using a spoon, scoop out a piece of dough, form it into a ball, and thoroughly coat it in powdered sugar. There must be a really thick layer of sugar.
- 3Spread them out on the baking sheet, spaced apart, place them in the preheated oven, and bake for approximately 10 minutes. The cookies should be soft and slightly underdone when removed. As they cool, their surface will harden, making them crispy, but they will remain beautifully soft and moist inside. After removing from the oven, let them cool on the baking sheet for about 3 minutes, then let them cool completely on a wire rack.
