Ingredients

  • 600 g chicken livers
  • 2 pcs onion
  • 2 cm fresh ginger
  • 3 cloves garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon cane sugar
  • 300 ml chicken stock
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • freshly ground pepper

Preparation

    Clean the livers and cut them into smaller pieces. Peel the onion and cut it into strips. Also, peel and finely chop the ginger and garlic.

    Pour a little oil into a pan and heat it. Sauté the onion for about 3 minutes, add the garlic and ginger, and sauté for another minute. Set the vegetables aside. Pour a little more oil into the pan. Add the livers and sear them on all sides. Season with soy and fish sauce, along with vinegar and sugar. Pour in the broth and bring to a boil.

    Mix the cornstarch in a little water and add it to the pan. Cook until the sauce thickens. Add the cooked vegetables. Season with salt and ground pepper. Serve with rice.
