Ingredients
- 400 g cherry tomatoes
- 1 pc salad cucumber
- 1 pc red onion
- 200 g feta cheese
- 100 g black pitted olives
- 100 g green pitted olives
Dressing and seasoning
- 1 pc lemon
- olive oil as needed
- dried oregano to taste
- salt to taste
- pepper to taste
Vegetable preparation
- 1Cut the tomatoes and onion into smaller pieces and place them in a large bowl.
- 2Scoop out the seedy centers from the cucumber, leaving only the firm part. Cut it into small cubes and add to the bowl.
- 3Halve the olives and add them to the vegetables. Finally, crumble the feta into the bowl.
Dressing and finishing
- 1Squeeze the juice from half a lemon into another small bowl. Season with salt and pepper. Gradually add olive oil while continuously whisking to create an emulsion and prevent the fat from separating from the liquid.
- 2Pour the dressing into the bowl with the salad, also add oregano to taste, and gently mix the salad. Taste and season with salt or pepper if needed.
