Cut the dumplings into 1 cm cubes. Crack the eggs into a bowl and whisk them with a fork. Season with salt and pepper.

Melt the butter in a pan over medium heat, add the dumplings and fry them for 1 minute. Add the chopped onion, mix, and fry the dumplings until golden brown, stirring occasionally.

Pour in the whisked eggs, mix thoroughly, and remove the pan from the heat. Off the heat, mix the dumplings with eggs again. The eggs will finish cooking thanks to the pan's residual heat, and the dish will remain moist. Season the dish with salt and freshly ground pepper if needed.
Chef's tip
You can sprinkle the dumplings with chopped parsley or chives. You can serve with pickled cucumber.
