Preheat the oven to 180 °C.

Place all dough ingredients into a stand mixer bowl and process with a K-beater attachment until a firm dough forms. Line a springform pan with baking paper and press the dough evenly into it with your fingers. Set aside.

Whip the cream until stiff. Mix all other filling ingredients in a bowl, then gradually fold in the whipped cream by hand using a spatula. Pour the filling evenly into the pan over the dough.
Chef's tip
Grate only the yellow part of the lemon zest. The white part is bitter.
