- 300 g smooth flour and more for flouring the surface
- 200 g butter
- 100 g sugar
- 1 teaspoon grated lemon zest

Instructions
- 1Preheat the oven to 170 °C.
- 2Mix all the ingredients together and process them into smooth dough. Wrap the dough in plastic wrap and let it rest in the fridge for at least 1 hour.
- 3On a floured surface, roll a disc of dough out about 3 mm thick. Cut out cookies of your preferred shape and transfer them to a parchment-lined baking tray. Place the tray in the preheated oven and bake for 12 minutes.
Tip
Every oven is different, so keep an eye on your Linzer cookies. They should stay pale, that means only slightly golden. For example, you can cut out round-shaped cookies, half of them with a cut-out center. After baking, spoon some jam onto your cookies, currant being the most traditional one. Slightly spicy marmalade works well, as the dough itself is sweet. You can dust the finished cookies with confectioner’s sugar. For making Linzer cookies, you will need various cookie cutters, baking paper and plastic wrap.
