INGREDIENTS
- 2 tablespoons lard
- breadcrumbs for dusting the baking dish
- 1 kg potatoes, cooking type B
- 250 g cooked smoked meat
- 6 eggs and 5 hard-boiled
- 200 g peeled onion
- 100 ml cream, min. 31%
- 350 ml full-fat milk
- salt
- pepper
- pickled cucumbers
INSTRUCTIONS
- 1Preheat the oven to 170 ºC. Grease a baking dish with 1 tablespoon of lard and sprinkle with breadcrumbs.
- 2Boil potatoes in their skins in salted water until tender, let them cool, and peel them. Slice them 0.5 cm thick. Also slice the meat 0.5 cm thick. Peel the eggs and slice them. Slice the onion into thin rings.
- 3In a pan over medium heat, melt the remaining lard, add the onion, and sauté until translucent, stirring frequently.
- 4Layer the sliced potatoes, seasoned with salt and pepper, smoked meat, boiled eggs, and onion alternately in the baking dish. Finish with a layer of potatoes.
- 5In a bowl, whisk the eggs with milk and cream using a fork, add 2 pinches of salt and freshly ground pepper. Pour the mixture into the baking dish, place it in the preheated oven, and bake for 50 minutes. Remove from the oven and let rest for 10 minutes.
Tip
Pickled cucumbers or vegetables, or cabbage salad, go perfectly with French potatoes.
