Preparation method

Boil potatoes in their skins until tender and let them cool. Boil eggs until hard-boiled.

Peel the eggs and cooled potatoes and cut them into 1 cm cubes. Clean and finely chop the spring onion.

Mix the eggs, potatoes, and spring onion with mayonnaise and mustard. Season with salt and pepper to taste. Chill in the refrigerator.

Chef's tip

You can add chopped chives or flat-leaf parsley to the salad.
