INGREDIENTS

  • 150 g plain yogurt (1 cup)
  • 350 ml milk
  • 2 eggs
  • 1 heaped tablespoon butter
  • 250 g all-purpose flour
  • 6 g baking powder (1/2 sachet)
  • a few drops of oil for frying

    Weigh the flour into a bowl, add baking powder, and mix with a whisk. This will also aerate the flour, so you don't even have to sift it. Feel free to remember this trick for your next morning experiments in the kitchen.

    Melt the butter. In a second bowl or a kitchen plastic shaker, mix yogurt, milk, eggs, and melted butter. Pour this liquid mixture into the flour and (again) briefly mix with a whisk. Don't worry if there are lumps in the flour; they will all disappear completely in the pan. Just a few strokes, enough to moisten all the flour, and don't bother with further careful mixing. Save your energy. Don't strive for perfection. Surprisingly, it will only benefit the dough.

    Heat a large, ideally non-stick pan. Once hot, grease it with a little oil. Using a small ladle, transfer some batter onto it and spread this spot with the convex side of the same ladle to a size of approximately 6-7 cm. Continue until you fill the entire pan with small pancakes. Now you can observe how the batter slightly puffs up and bubbles form in it, which then burst on the surface. Once you see these mini-craters, it's time to lift and flip the pancakes and quickly cook them on the other side. Once they turn golden on the flipped side, remove them.

    Continue until you use up all the batter and are fully awake. Serve with a selection of jams and preserves from your fridge.
