  • 40 g dried raisins
  • 200 g apple
  • 100 g carrot
  • 150 g fine spelt flour
  • 80 g ground oat flakes
  • Teaspoon ground cinnamon
  • Teaspoon baking powder
  • 2 eggs
  • 130 g ripe banana
  • 60 ml rapeseed oil
  • Pinch of salt
  • 150 g full-fat plain yogurt

    First, pour boiling water over the raisins and let them soak. Preheat the oven to 180 °C.

    Finely grate the peeled carrot and apple with its skin.

    Mix the flour, ground oat flakes, cinnamon, and baking powder in a bowl.

    Separate the egg white from the yolk, and in a second bowl, blend the separated yolks, banana, yogurt, and oil with an immersion blender. Pour the liquid mixture into the dry ingredients and mix everything.

    Add a pinch of salt to the egg whites and whisk them into a stiff peak in a tall container. Then carefully fold the egg whites into the batter. Fill either silicone or paper muffin cups with the finished batter, placing them into a muffin tin beforehand.

    Drain the water from the raisins and chop them into smaller pieces. Add them to the batter along with the grated carrot and apple and mix.

    Bake for 30-35 minutes at 180°C until golden brown.
