INGREDIENTS
- 40 g dried raisins
- 200 g apple
- 100 g carrot
- 150 g fine spelt flour
- 80 g ground oat flakes
- Teaspoon ground cinnamon
- Teaspoon baking powder
- 2 eggs
- 130 g ripe banana
- 60 ml rapeseed oil
- Pinch of salt
- 150 g full-fat plain yogurt

INSTRUCTIONS
- 1First, pour boiling water over the raisins and let them soak. Preheat the oven to 180 °C.
- 2Finely grate the peeled carrot and apple with its skin.
- 3Mix the flour, ground oat flakes, cinnamon, and baking powder in a bowl.
- 4Separate the egg white from the yolk, and in a second bowl, blend the separated yolks, banana, yogurt, and oil with an immersion blender. Pour the liquid mixture into the dry ingredients and mix everything.
- 5Add a pinch of salt to the egg whites and whisk them into a stiff peak in a tall container. Then carefully fold the egg whites into the batter. Fill either silicone or paper muffin cups with the finished batter, placing them into a muffin tin beforehand.
- 6Drain the water from the raisins and chop them into smaller pieces. Add them to the batter along with the grated carrot and apple and mix.
- 7Bake for 30-35 minutes at 180°C until golden brown.
