INGREDIENTS
- 1 tablespoon olive oil
- 100 g tomato paste
- 350 g pasta
- 300 g tomatoes
- 3 cloves garlic
- 300 g zucchini (one small)
- 100 g mushrooms
- 125 g baby spinach
- ½ onion

INSTRUCTIONS
- 1Sauté crushed garlic in olive oil until fragrant. Add diced onion, tomato paste, and mix.
- 2Add zucchini, diced tomatoes, sliced mushrooms, and baby spinach. Mix everything together, add raw pasta, and pour in 700 ml of water. Mix again, season with salt and pepper, and cook covered, stirring occasionally, for about 10 - 15 minutes, until the pasta is tender and the water is almost reduced.
- 3Season with salt and pepper, drizzle with a tablespoon of olive oil, and serve.
