INGREDIENTS FOR THE CRUST
- 3 young zucchinis (approx. 800 g)
- 2 eggs
- 70 g grated Parmesan-type cheese
- 1 clove of garlic
- 1 teaspoon dried oregano
- Salt
- Pepper
INGREDIENTS FOR THE TOMATO SAUCE
- 200 g chopped canned tomatoes
- 1 small onion
- Several fresh basil leaves
- 1 teaspoon olive oil
- Salt
- Pepper
INGREDIENTS FOR FINISHING
- 125 g mozzarella
- 5 pcs cherry tomatoes
- 1/2 small yellow bell pepper
- Several fresh basil leaves
INSTRUCTIONS
- 1Preheat the oven to 200 degrees Celsius - top and bottom heat. Wash the zucchini and cut off the ends. Grate on a fine grater. Salt and thoroughly squeeze out all the water. You can squeeze it in smaller portions in your hands, or strain it through a cloth. Add eggs, crushed garlic, oregano, and cheese. Season with pepper and mix everything together. Line a baking sheet with parchment paper and form a 25 cm diameter disc on it. Bake for 20 minutes.
- 2Meanwhile, prepare the tomato sauce. Finely chop the onion and sauté it in olive oil until golden. Add crushed tomatoes, salt, and pepper. Reduce for about 10 minutes. Then blend everything and add torn basil leaves.
- 3After 20 minutes of baking, a firm and golden crust will form. At this point, spread the tomato mixture over it, arrange mozzarella slices, tomatoes, and pepper strips. Bake for another 15 minutes. Serve with fresh basil.
