INGREDIENTS
- 900 g dark cherries, blueberries or figs
- 70 g butter + for greasing the mold
- 100 g all-purpose flour
- 90 g granulated sugar + for sprinkling the mold
- 160 g milk
- 160 g cream (min. 30%)
- 1 egg + 60 g egg yolks
- grated zest of ½ lemon
- 1 vanilla bean
- powdered sugar for sprinkling the finished pie
- pinch of salt

INSTRUCTIONS
- 1Preheat the oven to 180 °C. Grease the mold with butter and sprinkle with sugar.
- 2Stem and pit the cherries. Slit the vanilla pod lengthwise and scrape out the seeds with the tip of a knife. Melt the butter in a saucepan over low heat.
- 3Sift the flour into a stand mixer bowl through a fine sieve, add salt, eggs, egg yolks, sugar, vanilla bean seeds, lemon zest, and mix everything until smooth at medium speed. Slowly pour in the milk, cream, and finally the melted butter, stirring constantly.
- 4Arrange the cherries in the mold and pour the batter over them.
- 5Place the mold in the preheated oven and bake for 30–35 minutes. Do not open the oven during baking to prevent the batter from collapsing.
- 6Let the finished pie cool and sprinkle with powdered sugar before serving.
Tip
Sprinkle the Ø 30 cm mold with sugar because the sugar will caramelize during baking, adding extra flavor to the pie.
Instead of cherries, you can use blueberries or figs.
If you don't have a vanilla bean, use ½ teaspoon of vanilla extract in the batter.
