INGREDIENTS

  • 3 eggs
  • 200 g cottage cheese
  • 1 tablespoon milk
  • 100 g ham
  • 40 g hard cheese (Edam, Gouda)
  • 50 g young nettles
  • Parsley
  • 70 g whole spelt flour
  • 4 g baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon dried garlic
  • Pinch of ground pepper

INSTRUCTIONS

    Preheat the oven to 180 °C with top and bottom heating.

    Blanch the nettles in hot water, then immerse them in cold water for a minute and dry. Pick off the leaves and cut them into smaller pieces. Pick the leaves from the parsley and chop finely.

    Crack the eggs and separate the yolks. Whisk the egg whites into stiff peaks. Blend the yolks with cottage cheese and milk. Add the finely chopped ham, cheese, young nettle leaves, and parsley. Mix, add the flour with baking powder, and season with salt, pepper, and dried garlic. Mix again and carefully fold in the egg whites.

    Divide the batter into muffin cups or a well-greased and floured muffin tin and bake for 30 minutes. Do not open the oven during the first half of the baking time to prevent the muffins from collapsing.
