  • 8 slices of stale bread (preferably white, ciabatta, or French baguette)
  • 200 g crumbled feta cheese
  • 100 g grated cheese (e.g., mozzarella or cheddar)
  • 200 g cherry tomatoes, halved
  • 100 g black olives, pitted and sliced
  • 1 small zucchini, thinly sliced
  • 1 red onion, finely chopped
  • 2 cloves garlic, finely minced
  • 6 eggs
  • 300 ml milk or cream
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano 16754
  • Salt
  • Pepper

    Cut the bread into cubes (about 2 cm large) and set aside.

    Heat olive oil in a pan over medium heat. Add the chopped onion and garlic and sauté until the onion softens and begins to turn golden. Add the zucchini and sauté for a few more minutes until slightly tender. Remove the pan from the heat and let the mixture cool.

    In a large bowl, combine the cubed bread, cherry tomatoes, olives, crumbled feta, and grated cheese.

    Add the sautéed onion and zucchini mixture, dried oregano (or Herbes de Provence), salt, and pepper.

    Pour the egg mixture over the bread mixture and mix thoroughly so that all ingredients are combined and the bread soaks up the egg mixture.

    In another bowl, whisk the eggs with milk or cream. Season the mixture well with salt and pepper.

    Let the mixture rest for about 10 minutes so that the bread can soak well.

    Preheat the oven to 180°C. Transfer the prepared mixture into a greased baking dish (approx. 20x30 cm). Bake in the preheated oven for 35-40 minutes, or until the strata is golden brown and crispy.

    Let the strata rest for 5-10 minutes after removing it from the oven.
