Preparation method

Bring the chicken stock to a boil. Add the lemongrass, galangal, and lime leaves. Simmer gently for 5–7 minutes.

Add the mushrooms and cherry tomatoes. Cook for 3–4 minutes.

Stir in the chilli paste and fish sauce. Finally, add the prawns – they only need to cook for 2–3 minutes.
Chef's tip
If you have head-on prawns, simmer the heads in the stock first for extra umami flavour. Strain before serving.
