INGREDIENTS

  • 500 g ground beef
  • 100 g feta (crumbled)
  • 1 small red onion (finely chopped)
  • 3 cloves of garlic (finely minced)
  • 4 pita breads
  • 2–3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1 teaspoon cinnamon (optional, but recommended)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried chili (or substitute with smoked paprika)
  • Salt
  • Pepper

INSTRUCTIONS

    In a bowl, mix the ground meat, crumbled feta, chopped red onion, garlic, and all the spices. Mix well, ideally by hand, to combine the flavors.

    Cut each pita bread in half (if they are thicker, cut into a pocket) and fill with a thin layer of the meat mixture – about 1–1.5 cm thick. A thin layer is important to ensure the meat cooks well.

    Lightly brush the filled pitas with olive oil on the outside so they grill nicely and become crispy.

    Grill on medium heat (or fry in a pan with a little oil) for 3–5 minutes on each side, until the meat is cooked and the pita is beautifully golden and crispy.
