INGREDIENTS FOR MINT SYRUP
- 1 lemon
- 2 tablespoons of vinegar
- 400 g sugar
- 50 - 70 g mint (2 large handfuls of leaves)
INGREDIENTS FOR SPRITZ
- 150 ml chilled apple must
- 150 ml sparkling water
- Ice
- Slice of lemon or lime

Pour water over the lemon so that it is completely submerged, and add two tablespoons of vinegar. Let it stand for a few minutes. Then rinse the lemon and slice it. Pick the mint leaves and chop them into smaller pieces.

Boil half a liter of water with sugar and let it cool. Then add the mint and lemon. Let it macerate for 12 to 24 hours. Then strain through a fine sieve or cheesecloth. Pour into a sealable bottle and store in the refrigerator.

Fill glasses with ice. Pour in 20 ml of mint syrup and apple must. Top up with sparkling water. Stir and garnish with a lemon slice and a sprig of fresh mint.
