INGREDIENTS

  • 1 hard-boiled egg
  • 170 g tofu
  • 60 g pickled cucumbers 170 g tofu
  • 60 g mayonnaise
  • 30 g spring onion
  • 20 g Dijon mustard
  • 20 g capers
  • 1 clove garlic
  • 1 tablespoon roughly chopped basil
  • 1 tablespoon roughly chopped flat-leaf parsley
  • 1 tablespoon olive oil
  • 1 teaspoon finely chopped coriander 1 tablespoon olive oil
  • juice of ½ lemon
  • pinch of pepper 1 teaspoon finely chopped coriander 1 tablespoon olive oil
  • pinch of salt juice of ½ lemon

INSTRUCTIONS

    Roughly chop the capers, finely chop the pickles, spring onion, and eggs.

    Cut the garlic lengthwise, remove the central germ and discard it. Finely chop the garlic.

    Mix all ingredients except tofu together in a bowl.
  • 4
    Crumble or mash the tofu with a fork and mix it into the salad. Add more salt to taste if needed.
