INGREDIENTS FOR THE DOUGH

  • 125 ml milk
  • 70 g rye flour
  • 50 g English bacon
  • 1 egg
  • Clove of garlic
  • Teaspoon of baking powder
  • Pinch of salt

INGREDIENTS FOR THE FILLING

  • 100 g leafy spinach
  • 50 g onion
  • 20 g lard
  • 4 eggs
  • 40 g Gouda

INSTRUCTIONS

    Dice the bacon and cook it in a pan. Whisk the eggs with milk, add flour, bacon, pressed garlic, baking powder, and salt.

    Heat up the waffle maker, which can be lightly greased with lard. Use approximately 2 tablespoons of dough per waffle. After about 10 minutes, the waffles can be removed.

    Finely chop the onion, sauté it in lard, add spinach, season with salt, and simmer until tender.

    Serve the waffles with leafy spinach, a fried egg, and cheese.
