Ingredients
- 12 smaller potatoes, preferably salad potatoes
- 12 slices of bacon
- A few sprigs of rosemary
- A piece of Cheddar cheese
Instructions
- 1Wash the potatoes thoroughly and then cook them in salted water until tender. This takes approximately 25 minutes. You can easily tell they are soft by piercing a potato with a sharp knife – it should go through like wax.
- 2Drain and let them steam off uncovered for 10 minutes and cool down slightly.
- 3Preheat the oven to 180 degrees Celsius. Cut thin slices of cheese, barely the size of a child's palm. Slit each potato lengthwise about two-thirds of the way through, insert the cheese, wrap with a slice of bacon, and pierce crosswise with a short sprig of rosemary to hold everything together.
- 4Arrange the prepared potatoes in a baking dish (you don't need to grease it, the bacon will release enough fat) and place in the oven. Bake uncovered for about 15 minutes, until the cheese starts to melt and the bacon turns golden.
