Ingredients
- 12 small potatoes, preferably salad potatoes
- 12 slices of bacon
- A few sprigs of rosemary
- A piece of Cheddar cheese
Instructions
- 1Thoroughly wash the potatoes and then boil them in salted water until tender. This takes approximately 25 minutes. You can easily tell they are tender by piercing a potato with a sharp knife – it should slide through like wax.
- 2Drain and let them steam off uncovered for 10 minutes to cool down slightly.
- 3Preheat the oven to 180 degrees Celsius. Cut thin slices of cheese, barely the size of a child's palm. Cut each potato lengthwise about two-thirds of the way through, insert a slice of cheese, wrap it with a slice of bacon, and pierce it crosswise with a short sprig of rosemary to hold everything together.
- 4Arrange the prepared potatoes in a baking dish (you don't need to grease it, the bacon will release enough fat) and place in the oven. Bake uncovered for about 15 minutes, until the cheese starts to melt and the bacon turns golden.
