INGREDIENTS
- 25 g butter
- 1 onion (60 g)
- 2 cloves garlic
- 50 g all-purpose wheat flour
- 850 ml chicken broth
- 150 g cheddar
- 1 package fresh broccoli (500 g)
- 100 g fresh spinach
- 250 g cooking cream 15-16 %
- Pepper
- Salt
- 500 ml whole milk
INSTRUCTIONS
- 1Peel and finely chop the onion and garlic. Wash the broccoli, cut off the florets and clean the stem. Rinse the spinach and finely grate the cheddar.
- 2In a pot, melt the butter and sauté the onion with garlic. Then add the flour and cook it in.
- 3Now pour in the broth and milk and the broccoli stems and let simmer for 10 minutes, stirring occasionally.
- 4Remove the stems, add the broccoli florets and cheddar, and simmer again.
- 5Finally, add the spinach and cream, simmer for another 5 minutes, and blend everything until smooth.
- 6Season with salt and pepper to taste.
- 7Serve with croutons and grated cheddar.
