- 500 g pre-cooked chickpeas
- 100 g feta cheese
- 1 shallot
- 300 g ricotta
- 1 handful of fresh parsley
- 1 tablespoon of nutritional yeast
- Salt
- Pepper

Drain the chickpeas. Finely grate the shallot and feta cheese and add both to the chickpeas.

Coarsely chop the parsley and mix it into the chickpeas along with the ricotta, nutritional yeast, salt, and pepper.

To let the flavours combine properly, you can put the salad in the fridge for a while before serving.
