Preparation method
In a double-bottomed pot or a regular saucepan on the lowest heat setting, slowly melt the chocolate. That is, so that the chocolate melts, but under no circumstances should it start to burn. Do not neglect continuous stirring.
In a second pot, bring the milk to a boil and, stirring constantly, pour it over the melted chocolate.
Dissolve cornstarch in a small amount of water (about two to three tablespoons), pour it into the chocolate to thicken, and constantly stir while continuing to heat on the hob until the chocolate and milk combine into a thick mixture. This takes about a minute. When tasting, you should not feel raw starch.
Chef's tip
If there's a risk that this basic version might bore you, try adding a kick with hot peppers. First, add one small dried chili pepper to the milk, bring to a boil, and remove from heat. Once the milk cools to around 50 degrees, pour it through a sieve into the melted chocolate, as described in the previous steps. Other times, you can try crushed vanilla or a piece of cinnamon. And a little bit of suitably chosen hard alcohol, such as griotka, will certainly work too.
