  • 150 g chocolate with over 60% cocoa content
  • 250 ml milk
  • 1 level teaspoon cornstarch

    In a double boiler or a regular saucepan on the lowest heat setting, slowly melt the chocolate. The chocolate should melt, but under no circumstances should it start to burn. Do not neglect to stir continuously.

    In a second pot, bring the milk to a boil and, stirring constantly, pour it over the melted chocolate.

    Dissolve cornstarch in a small amount of water (about two to three tablespoons), pour it into the chocolate to thicken, and stir constantly while continuing to heat on the hob until the chocolate and milk combine into a thick mixture. This takes about a minute. When tasting, you should not feel raw starch.
Tip
If there's a risk that this basic version might bore you, try adding a kick with hot peppers. First, add one small dried chili pepper to the milk, bring to a boil, and remove from heat. Once the milk cools to around 50 degrees, strain it and pour it over the melted chocolate, as described in the previous steps. Other times, you can try crushed vanilla or a piece of cinnamon. And a bit of well-chosen hard alcohol, such as griotka, will also surely work.
