INGREDIENTS
- 2 kg tomatoes
- 2 apples (approx. 300g)
- 2 onions (approx. 300 g)
- 10 cloves
- 10 allspice
- 10 whole peppercorns
- 5 bay leaves
- 100 g brown cane sugar
- 80 ml apple cider vinegar
- 1 tablespoon ground sweet paprika
- 1 tablespoon salt
INSTRUCTIONS
- 1Wash the vegetables. Cut the tomatoes into quarters. Cut the apples into quarters, remove the core, and then cut them into smaller pieces. Peel the onion and also cut it into quarters.
- 2Place the prepared vegetables into a pot, add cloves, allspice, pepper, and bay leaves. Cook over medium heat for approximately 45 minutes. Stir continuously.
- 3Blend the mixture with an immersion blender and then strain it. Return to the pot. Add sugar, apple cider vinegar, ground paprika, and salt. Cook over the lowest heat for approximately 4 hours or until the ketchup reaches the desired consistency. To test this, take a spoonful of ketchup onto a plate. If liquid starts to separate from the ketchup after a while, continue cooking. Finally, blend until smooth.
- 4Fill sterilized jars with the finished ketchup and preserve for 20 minutes at 85 °C.
