Preparation method
In a large bowl, mix all ingredients and work into a compact dough.
Cover the bowl with the dough with a kitchen towel and let it rise on the work surface for 2–2.5 hours, until the dough doubles in volume.
Approximately 30 minutes before the end of rising, preheat the oven to 230 °C and at the same time place a lidded baking dish (approx. 15 cm × 20 cm), into which the bread will fit, into the oven to heat up. Instead of a dish, an oven-safe pot with a lid can also be used.
Chef's tip
You can also let the dough rise overnight in the refrigerator (8–12 hours). After removing it from the refrigerator, immediately transfer it to the heated dish and bake according to the further instructions in the procedure.
