INGREDIENTS
- 500 g all-purpose flour
- 3 eggs size M
- Zest of 1 lemon
- 150 g butter
- 18 g baking powder with cream of tartar
- 100 g blanched almonds - sliced
- 20 g vanilla sugar
- 180 g powdered sugar
- 250 g soft curd cheese (in a tub)
- 100 g raisins
INSTRUCTIONS
- 1Let the butter soften to room temperature. Add powdered sugar, vanilla sugar, and 2 eggs. Whisk together until light and frothy. Then add curd cheese and sifted flour mixed with baking powder. Next, add raisins, lemon zest, and 2/3 of the almonds. Knead into a consistent dough. Divide the dough in half and form 2 loaves. Brush them with beaten egg and sprinkle with the remaining almonds.
- 2Bake on a baking sheet lined with parchment paper in a preheated oven with top and bottom heat. Bake for 10 minutes at 200 degrees, then reduce the temperature to 160 degrees. Bake for another approximately 45-50 minutes. Use a skewer to check if the dough is no longer sticky. Serve the Mazanec immediately after baking, when it is beautifully soft and moist. If you want to consume it later, let it rest in aluminum foil for at least 1-2 days. Strawberry jam pairs wonderfully with it.
