INGREDIENTS
- 1 onion
- 1 clove of garlic
- 1 tablespoon of olive oil
- ½ teaspoon dried oregano
- 2 carrots
- 2 potatoes
- 250 g dried split peas
- 1 teaspoon salt
- ground black pepper to taste
Instructions
- 1Peel and finely chop the onion and garlic. Clean the carrots and cut them into centimeter cubes, do the same with the potatoes. Sort and rinse the peas in a colander.
- 2Heat the oil in a pot and quickly and intensely sauté the carrots. Once they start to turn golden in places, add the onion and garlic, a large pinch of salt, oregano, and optionally freshly ground pepper. Stir for a minute until the onion softens and everything becomes fragrant throughout the kitchen.
- 3Pour a liter of water over the soup base, add half of the peas, potatoes, and bring to a boil. Let it simmer gently, uncovered or only half-covered, for about 30 minutes.
- 4Add the remaining peas to the soup and cook for another 30-40 minutes until all the peas in the soup are soft. Finally, season the soup again with salt and pepper.
