Flavor profile: Raisins, dates, nougatFarm: Sierra Mazateca, OaxacaCoffee processing: washedVariety: 100% arabica Typica and BourbonThis coffee comes from the La Mazateca region in the Mexican state of Oaxaca, specifically from the area around the town of Huautla de Jiménez. The name Tejao is derived from the local Mazatec term for this region. The blend is composed of so-called nanolots from 127 small farmers, each contributing on average less than one bag of coffee (about 63 kg of parchment). All lots underwent careful sensory evaluation by Ensambles. Coffee cultivation in this area is largely ecological, with minimal intervention in nature. Farmers mainly grow Typica and Bourbon varieties, often on trees up to 40 years old, reaching heights of over two meters. The coffee is grown in agroforestry systems – among other crops and in the shade of trees, which supports biodiversity and a stable microclimate. Processing takes place directly on the farms up to the dry parchment stage. After harvesting, the cherries are sometimes sorted using water flotation, then manually depulped and dry fermented in wooden tanks for 24 to 72 hours. Due to the cool climate of this area, the fermentation is longer, contributing to a more pronounced and complex flavor profile. The coffee is then dried on rooftops or terraces. The resulting cup is clean, delicate, and sweet – with flavors of dried fruit and nougat. The coffee is suitable for filter, V60, batch brew, or Aeropress. Coffee, in collaboration with the Steezy graphic studio, created a “grid” – a simple chart where you can easily find the characteristics of each coffee.
