- 125 g quark in paper packaging
- 70 g butter

- 65 g cane sugar
- 200 g whole wheat flour
- 1 baking powder
- Grated zest from half a lemon
- 50 g dried plums
- 50 g dried apricots
- 50 g hazelnuts
- 1 tablespoon powdered sugar
- 30 g butter
- Stevia powder
- Powdered cane sugar
- Parchment paper
In a bowl, whisk together quark, butter, eggs, vanilla, and sugar. Add flour, baking powder, and lemon zest. Cut dried fruit into smaller pieces and chop nuts. Add to the dough and mix. Finally, transfer the dough to a work surface, lightly dust with flour, and knead several times by hand. Roll out the dough into a 3 cm thick sheet, fold it along the longer side and place it at ¾ to create the classic stollen shape.
Preheat the oven to 180 °C. Transfer the stollen to a baking sheet lined with parchment paper and bake for 20 minutes. Then reduce the temperature to 150 °C and bake for another 15 minutes.
After removing from the oven, brush with melted butter and sprinkle with powdered sugar.
Chef's tip
As an alternative to classic sugar, powdered cane sugar or stevia powder works well.
