Preparation method

In a bowl, whisk the eggs with a pinch of salt and prepare a thin omelette in a shallow pan. Layer the omelette, stewed ham, and torn parsley leaves onto the beef slices. Drizzle with olive oil, season with salt, and roll into small rolls. Secure with a wooden or metal skewer to prevent unrolling.

In the same way, prepare pork neck slices, which you layer with pancetta slices, grated Provolone cheese, and dust with breadcrumbs before wrapping.

Drizzle the rolls with olive oil and coat them in breadcrumbs. Sear on all sides in a steak pan with a little olive oil.
