INGREDIENTS FOR THE SALAD

  • 300 g dry wheat fusilli (you can substitute with any type of pasta)
  • 250 g cherry tomatoes
  • 1 English cucumber (approx. 250 g)
  • 120 g feta cheese (or Balkan cheese)
  • 10 g fresh parsley (finely chopped)
  • 5 g fresh basil (finely chopped)

INGREDIENTS FOR THE DRESSING

  • 50 ml virgin olive oil
  • 1 tablespoon lemon juice
  • 1⁄2 tablespoon honey
  • 2 teaspoons Dijon mustard
  • Salt
  • Pepper

METHOD

    First, cook the pasta: Fill a large pot with enough water and bring to a boil. Then add the pasta to the water and cook for 12–15 minutes over medium heat. After cooking, drain the pasta and rinse under cold water.

    Meanwhile, dice the cherry tomatoes and cucumber into small cubes in a large bowl. Then crumble the feta cheese over them and add the parsley and basil.

    Now prepare the dressing: In a glass (approx. 200 ml volume), combine the oil, lemon juice, honey, Dijon mustard, salt, and pepper. Close with a lid and shake.

    Add the cooled pasta to the bowl with the vegetables and pour the dressing over it (to taste).

    Let the salad chill for at least 30 minutes (ideally 1–2 hours) and then serve.
