- 8 slices of English bacon
- 1 thicker slice of bread
- 1 tablespoon of rapeseed or sunflower oil
- 2 eggs
- 2 heads of romaine lettuce
- 2 medium tomatoes
- 1 handful of fresh chives
- 50 g mayonnaise
- 2 tablespoons of lemon juice
Preheat the oven to 160 °C and line a baking sheet with parchment paper.
Arrange the bacon slices on the lined baking sheet. Then tear the bread into smaller pieces, add them to the baking sheet, drizzle with 1 tablespoon of oil, and season with salt. Next, mix the contents of the baking sheet, place the sheet in the oven, and bake for 10–12 minutes at 160–170 °C. Halfway through baking, turn the bread pieces and bacon so they cook evenly.
While the bacon croutons are baking, cook the eggs: Place them in a small saucepan, cover with water, bring to a boil over high heat, and cook for 5 minutes over medium heat. Then remove the saucepan from the heat and leave the eggs in the hot water for another 5 minutes. Afterward, cool them under running cold water.
