Ingredients
- 150 g milk
- 60 g softened butter
- 2 pcs eggs
- 21 g fresh yeast
- 30 g almond flakes
- 360 g whole wheat flour
- 66 g brown cane sugar
- 5 g vanilla extract
Instructions
- 1Take the eggs and butter out of the refrigerator 1 hour before preparing the dough.
- 2Heat the milk until lukewarm. Mix the ingredients for the leaven until smooth and let rest for 15-20 minutes. Once the leaven has risen, add it to a bowl along with the other ingredients, except for the butter, and knead into a smooth dough for at least 10 minutes. Cut the butter into pieces and gradually add it to the dough. Then, knead the dough for another 5 minutes.
- 3Cover the bowl with the dough with a tea towel and let it rise in a warm place for approximately 60 minutes. The dough must double in size.
- 4Turn the dough out onto a work surface, divide it into portions, from which you will form strands and braid the Vánočka.
- 5Place the Vánočka on a baking sheet lined with parchment paper, cover with a tea towel, and let it rise again. This takes approximately 45 minutes.
- 6After 30 minutes of rising, turn on the oven to top and bottom heat and set it to 170 °C. Once the Vánočka has risen, brush it with beaten egg and sprinkle with almond flakes. Bake for approximately 30 minutes until golden brown.
