  • Wholemeal toast bread or other wholemeal pastry
  • 4 eggs
  • 100 g Lučina or other natural cheese
  • 20 g mayonnaise
  • 1 tablespoon mustard
  • 1 spring onion or chives
  • 50 g arugula
  • Half a teaspoon of salt
  • Pinch of ground pepper

Place the eggs in a saucepan, cover with water, and bring to a boil. Once the water starts boiling, reduce the heat and cook for 8 - 10 minutes. Then, drain the hot water and cover with cold water. Let the eggs cool for a few minutes, then peel them.

Finely chop the eggs, or you can use an egg slicer to make the job easier. Add the cheese, mustard, chopped spring onion or chives, salt, and ground pepper. Mix well.

Place arugula on a slice of toast bread, then the egg spread, and cover with a second slice of bread.
