- 80 - 100 g rolled oats, whole (not instant or crushed)
- 240 - 300 ml milk
- 2 medium-sized apples
- about 1 lemon
- 2 tbsp honey
- 2 tubs of thick creamy yogurt
- a handful of nuts or almonds
- a handful of raisins
The night before, mix the oats with three times their weight of milk and store in the fridge overnight. By morning, the oats will swell, soften beautifully, and above all, absorb almost all the liquid.
Quarter and core the apples, and grate them coarsely with the skin on. Immediately drizzle with lemon juice and mix so that the fruit does not brown unnecessarily. Season with honey, the amount depends on the natural sweetness of the apple.
Mix the swollen oats with the remaining milk and yogurt into the seasoned apple. Divide into bowls. Coarsely chop the nuts and sprinkle them along with the raisins over the finished muesli. Eat immediately.
Chef's tip
Feel free to swap regular yogurt for Greek yogurt (which is richer) or even whipped cream: depending on what kind of performance you feel up to today. You can also avoid soaking in milk; it works with apple or orange juice too.
