  • 500 g fresh or frozen apricots
  • 1 tsp vanilla extract or 1 vanilla pod
  • 80 g chicory syrup
  • Fresh mint for garnish

Use well-ripened fruit for the sorbet. Wash and stone the apricots. Cut each apricot into eighths and place them all in a freezer bag. Put in the freezer and let the apricots freeze completely.

Apricots prepared this way can then be used at any time to make a quick sorbet. For this, prepare a blender, put the frozen apricots in it along with the vanilla extract and chicory syrup. If the mixture is too sour, add more chicory syrup to taste. Blend everything together to a smooth consistency and serve immediately.
