INGREDIENTS

  • 6 eggs
  • 220 g granulated sugar
  • 250 g all-purpose flour
  • 50 g shredded coconut + for dusting the pan
  • 50 g coarsely ground blanched almonds
  • 1 teaspoon baking powder
  • 200 ml coconut milk
  • Pinch of salt
  • Sunflower oil
  • Powdered sugar

INSTRUCTIONS

    Grease the Bundt cake pan with oil and sprinkle with shredded coconut.

    Mix the flour with coconut, almonds, and baking powder. Separate the eggs into whites and yolks. Add a pinch of salt to the egg whites and whisk them into a stiff peak, gradually whisking in the granulated sugar spoon by spoon, and then the yolks one by one.

    Finally, carefully fold the coconut milk and dry ingredients into the batter. Pour the batter into the pan and bake for 45 minutes in an oven preheated to 175°C. To check if the Bundt cake is baked, insert a skewer into it; if it comes out clean, it's done.

    Let the Bundt cake cool in the pan on a wire rack for 10 minutes, then carefully turn it out onto the rack and let it cool completely.

    Before serving, dust it with powdered sugar.
