INGREDIENTS
- 6 eggs
- 220 g granulated sugar
- 250 g all-purpose flour
- 50 g shredded coconut + for dusting the pan
- 50 g coarsely ground blanched almonds
- 1 teaspoon baking powder
- 200 ml coconut milk
- Pinch of salt
- Sunflower oil
- Powdered sugar
INSTRUCTIONS
- 1Grease the Bundt cake pan with oil and sprinkle with shredded coconut.
- 2Mix the flour with coconut, almonds, and baking powder. Separate the eggs into whites and yolks. Add a pinch of salt to the egg whites and whisk them into a stiff peak, gradually whisking in the granulated sugar spoon by spoon, and then the yolks one by one.
- 3Finally, carefully fold the coconut milk and dry ingredients into the batter. Pour the batter into the pan and bake for 45 minutes in an oven preheated to 175°C. To check if the Bundt cake is baked, insert a skewer into it; if it comes out clean, it's done.
- 4Let the Bundt cake cool in the pan on a wire rack for 10 minutes, then carefully turn it out onto the rack and let it cool completely.
- 5Before serving, dust it with powdered sugar.
