INGREDIENTS
- 200 g all-purpose wheat flour
- 150 g creamy yogurt
- 100 g kefir
- 100 g semi-skimmed milk
- 2 eggs
- 20 g melted butter
- 1 teaspoon ground vanilla
- 40 g powdered sugar
- Finely grated zest of 1 organic lemon
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- Pinch of salt
- 125 g fresh blueberries
INGREDIENTS FOR GARNISH
- Quark
- Plain Greek yogurt
INSTRUCTIONS
- 1Sift the flour into a bowl. Add salt, sugar, vanilla, baking powder, and baking soda and mix.
- 2In a second bowl, mix yogurt, kefir, milk, butter, and eggs. Whisk everything together and add to the bowl with the flour.
- 3Now whisk everything together. Finally, add lemon zest and blueberries.
- 4Cook on a non-stick pan dry on both sides.
- 5Serve with quark or Greek yogurt and fruit.
Tip
