INGREDIENTS

  • 4 whole wheat tortillas
  • 150 g spinach leaves
  • 60 g extra virgin olive oil
  • 1 clove garlic
  • 50 g unpeeled almonds
  • Juice from half a lime
  • 50 g Parmesan-type cheese
  • Salt to taste
  • 400 g pan cheese or grilling cheese
  • 4 handfuls mixed greens
  • 16 pcs cherry tomatoes

INSTRUCTIONS

    First, prepare the pesto - put the leaves together with garlic, almonds, and oil into a blender and blend until smooth. Then add finely grated cheese, lime juice, and season with salt.

    Grill the pan cheese on a pan or grill from both sides.

    Wash the lettuce leaves and let them drain. Also wash the cherry tomatoes and cut them in half or quarters.

    Spread the tortillas with pesto, place the mixed greens and cherry tomatoes on top, and finally add the grilled cheese.

    Now fold the tortilla from the ends to prevent the filling from falling out, then roll it up. Cut the tortilla in half.

    If desired, you can bake the tortilla at the end.
